In fact, I’m a little concerned that I’ll run out of ideas for delicious banana bread tastes, since banana bread is one of my absolute favourite things to make.

When I began thinking of a new banana bread recipe the other day, I realised I’d never shared my no-frills, no-bake recipe before. For the most part, it’s because I can’t seem to stop myself from throwing in interesting ingredients like chocolate, chocolate chips, cinnamon crumb, and almond butter + chocolate chips.

As a result, we’re keeping things incredibly basic today! Because, honestly, it’s wonderful to experiment with different tastes, but this vegan banana bread with just four ingredients is delicious on its own.

You’ll mix the rolled oats until they’re the consistency of flour, which will help to keep the banana bread together. Because it is the sole grain used in the recipe, the oat flour will give the bread a deep, rich texture – it will not be light and fluffy like a cake, but will be substantial and filling instead of light and fluffy.

Banana: As is typically the case when baking with bananas, make sure your bananas are quite ripe and spotty. Because they are the primary source of sweetness in this dish, they must be very ripe in order to provide the best banana taste and sweetness.

Ground flaxseed: To prepare flax eggs, place the ground flaxseed in a dish with water and place it in the refrigerator for 20 minutes, or until it gels a little. This not only helps to keep the banana bread together, but it also delivers some excellent nourishment.

Nondairy milk: a little amount of nondairy milk helps to bring the batter together. I use unsweetened almond milk to keep the taste as neutral as possible, but any nondairy milk should suffice.

Before mixing the rolled oats into flour, measure out the rolled oats. I always include the quantity of oats that are used BEFORE they are ground into flour. So, in this example, you’ll measure out 2 cups of whole, rolled oats and then combine those 2 cups in a blender to produce flour from scratch.

Make careful to use a nonstick or parchment-lined pan for this baking project. Use a nonstick or parchment-lined pan to prevent the bread from sticking to the pan after it has been baked.

Allow it to cool fully before using. Allow the banana bread to cool in the pan for at least 20 minutes before removing it from the pan and allowing it to cool fully before slicing into slices. Initially it is rather soft and gooey, but it will firm up throughout the cooling process. If you slice it too soon after baking, you will have a sticky mess on your hands.

INGREDIENTS

2 cups rolled oats, ground to a flour consistency using a blender

1 1/2 cups mashed bananas that are really ripe

2 flax eggs – combine 2 tablespoons ground flaxseed with 6 tablespoons water in a basin and place in the refrigerator for at least 20 minutes.

1/2 cup nondairy milk – I like unsweetened almond milk for this recipe.

Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).

In a large mixing basin, thoroughly incorporate all of the ingredients until they form a thick batter.

Pour the batter into a loaf pan that has been prepared with nonstick spray or parchment paper and bake for 40 minutes.

After 20 minutes in the pan, remove the banana bread and set it aside to cool fully before cutting it into squares or slices.

Leftovers should be kept in the refrigerator.
